Grapes

40% Corvina Veronese, 40% Corvinone Veronese, 20% Rondinella. Manual harvest and selection of the best bunches at the end of September / beginning of October, with careful attention to sugar and polyphenolic maturation. Perfect, very healthy grapes with high sugar content.

Fruit origins

Drying from the end of September for approximately 90/100 days, with a natural loss of 35-40% in weight. Great care is taken to control the integrity of the grapes.

Vinification

Soft pressing of the dried grapes in December/January. Fermentation at controlled temperature and maceration for 30/40 days.

Aging

The resulting wine is aged for 36 months (depending on the vintage) in new medium-toasted Allier oak barriques; the wine evolves in the bottle for at least 6 months.

Tasting notes

Deep ruby red color with garnet veins. Ethereal, fragrant, spicy aroma, with hints of cherry, bitter almond and vanilla. Full, warm, velvety, soft flavor, on a pleasantly bitterish background.

Analysis

Alcohol 16,2% Vol; Total acidity 5,70 g/l; Sugar residue 6 g/l; Net dry extract 35 g/l.

Gastronomy

Traditionally paired with game, grilled meat, braised meats and mature or hard cheeses. Excellent as a meditation wine. It is recommended to uncork an hour before and serve at a temperature of 17-18 °C.
