Grapes

Corvina Veronese e Corvinone Veronese 80%, Rondinella 20%. Manual harvesting and selection of the best bunches at the end of September.

Fruit origins

Natural drying in the fruit cellar for approximately 20 days.

Vinification

Slow pressing of the dried grapes for 20 days. Maceration for 10/15 days and fermentation in stainless steel.

Aging

Aged in large Slavonian oak barrels for 6 months.

Tasting notes

Ruby red color. Intense, spicy, delicate and fruity aroma. Delicate aroma with a slightly bitter aftertaste. Pleasant freshness and acidity on the palate.

Analysis

Alcohol 13% Vol; Total acidity 5,7 g/l; Residual sugar 6,2 g/l.

Gastronomy

Particularly suitable with Amarone risotto, pumpkin risotto, roast red meats and small game. It also pairs perfectly with crusted fillet, sliced beef and lamb ribs. It is recommended to serve at 17-18 °C.
