Valpolicella, Verona, Veneto. Hilly wine yards situated at 200-350 meters over sea level, situated in the area Classica Valpolicella.

Grapes

Corvina Veronese e Corvinone Veronese 70%, Rondinella 30%.
Harvest: By hand.

Depositing

Cultivation by hand and selecting the best clusters at the end of month September. Withering at the end of September, for approximately 140 days, in order to obtain the ideal concentration.

Wine Production

Slight crushing of dried grapes in February; prolongated maturity for approximate 30 days with temperature control. Pressing of wine that is still sweet, with approximately 130 g/l sugar. Cooling with temperatures below 10°C and clearing wine in order to inhibit continuation of alcoholic fermentation and to keep wished residual sugars.

Ageing

Ageing in stainless steel at a temperature below 10°C for approximately 10 months. Evolution in bottles for 3 months.

Taste notes

Intense red color with violet reflexes. Fine, etherich, fruity, perfumed. Sweet, velveted and rich taste, with notes of cherry and Morello cherry.

Analysis

Alcohol 13% Vol; Total acidity 6,0 g/l; Sugar residual 135 g/l; Dried net extract 36 g/l.

Gastronomy

Dessert wine. Recommended with dry sweets, biscuits and short bread. It goes with strawberries or red forrest fruits. Ideal served cold at 13-15 °C
