Valpolicella, Verona, Veneto. Hilly wine yards situated at 200-350 meters over sea level, situated in the area Classica Valpolicella.

Grapes

Corvina Veronese 40%, Corvinone Veronese 40%, Rondinella 20%. Harvest: By hand.

Wine Production

Crushing and removing grapes from clusters. Fermentation at controlled temperature and maturity for 10 days.

Ageing

Maturity in stainless steel tanks and short duration ageing in bottles.

Taste notes

Intense, ruby red color. When smelling, it presents a bouquet that remembers of cherries and Morello cherries, with a note of small fruits and condiments typical for the sort. Velveted, delicate taste, with rich and persistant body. The residual taste keeps a freshness and special acidity. A rich and superb wine, it sees the distinctiveness of Corvina exalted.

Alcohol 12% Vol; Total acidity 5.6 g/l; Residual sugar 5.7 g/l; Net dry extract 28 g/l.

Gastronomy

Ideal with meals like paste, chicken, lamb, red meat, wild meat and cheese. It is recommended to be served at a temperature of 16-17°C.
