Grapes

40% Corvina Veronese, 40% Corvinone Veronese, 20% Rondinella.

Vinification

Pressing and destemming of the grapes. Fermentation at controlled temperature and maceration for 10/15 days.

Aging

Maturation in oak barrels for 6 months and brief refinement in bottle.

Tasting notes

Intense ruby red color. The nose highlights a bouquet reminiscent of cherry and black cherry, with hints of red fruits and spices typical of the variety. Velvety, soft, full-bodied and persistent taste. Wine with a pleasant freshness and acidity on the palate.

Analysis

Alcohol 13% Vol; Total acidity 5.6 g/l; Sugar residue 5.7 g/l; Net dry extract 28g/l.

Gastronomy

Ideal with pasta dishes, chicken, lamb, red meats, game and cheeses. It is recommended to serve at a temperature of 16-17 °C.
